Michigan Food Science Students Win With Allergen-Free Cookies

This article caught my eye.  It is about the Institute of Food Technologists food product development competition which took place in June.  A team of seven Michigan State University students created a refrigerated gluten-free chocolate chip cookie dough which is free of the top eight food allergens as defined by the U.S. Food and Drug Administration. I read about this, too. MSU is about an hour and a half from where I live. My husband went to the University of Michigan (MSU's rival) and is convinced nothing good comes from that school (you know men & their sports) but this is a wonderful thing these kids have done.

I can't imagine a cookie without wheat. Even thought we only deal with PA I would be willing to try this just to see how it tastes.
